Bubble gum, mints, sprays, breath fresheners etc do nothing to change to the amount of alcohol in a persons breath or 'fool' the breathalyser devices. At best they will help hide the smell of alcohol.
As for mouth washes, some contain alcohol, these may result in false positive high BAC readings due to residual mouth alcohol. However, residual mouth alcohol evapourates very quickly and definitely within the time period between a preliminary breath test at the roadside and an evidential breath test at the police station.
If it was possible to easily 'fool' the breathalyser devices, they would not be used in law enforcement and blood tests would be the prefered method of determining a suspects blood alcohol content rather than samples of breath.
